After countless tries at making my own iced coffee at home, I finally have a recipe that I LOVE!
Living in rural Saskatchewan, we stock up on beans at Starbucks whenever we are in the city. We grind our beans fresh every morning and make a strong pot of coffee to start the day. During the summer months, when we don’t drink a full pot, I keep a pitcher in our fridge where I pour our leftover daily coffee, so I always have cool fresh coffee on hand. And we also have an ice cubed tray dedicated to freezing coffee cubes 😉
To make the perfect cup I start with a mason jar. I fill it with 3-5 of my frozen coffee iced cubes. Then I add my cold coffee, filling to 3/4ths of the way full. Then I add unsweetened almond milk (we use Earth’s Own brand) almost to the top, a tiny bit of agave (I picked up from David’s Tea) and a splash of vanilla extract. It’s that simple…give it a stir, throw in your favourite fun coloured straw and voila….a summer treat!
